A Plethora of Peaches (Recipes)

For those of you who missed our class on peaches here are the recipes that were shared:

Fresh Peach Pie

2 Cups Sugar

6 Tablespoons Cornstarch

1 Cups Water

1 Package Peach Jello

Approx. 5 Cups Peaches, Peeled & Sliced

Pie Crust, Pre-Baked

Combine sugar, cornstarch, and water in a saucepan and cook until clear and thickened. Stir regularly. Remove from heat and add package of Jello. Allow to cool slightly and then mix with peeled and sliced fresh peaches.Mix gently and pour into a deep dish pie shell.

* Try spreading a thin layer of sweetened cream cheese in the pie shell first before adding the peach filling.

* Peaches & Peach Jello can be substituted for Strawberries & Strawberry Jello, or any other combination you'd like.

Peach Cake Roll

For the cake:

3 Eggs

1 Cup Sugar

1/3 Cup Water

1 Teaspoon Vanilla

3/4 Cup Flour

1/4 Teaspoon Salt

1 Teaspoon Baking Powder

For the Filling:

6 Ounces Cream Cheese

2 Tablespoons Butter

3/4 Cup Powdered Sugar

A Couple Scoops of Whipped Topping

Dash of Almond Flavoring

Peaches As Desired, Thinly Diced

Beat eggs first and then add rest of cake ingredients. Stir until smooth. Spread evenly in a greased, floured large cookie sheet. Bake at 375 degrees for about 12 minutes. Don't let edges get too brown. While still slightly warm, loosed edges and dump out on a towel dusted with powdered sugar. Roll up gently in towel and allow to cool

Combine ingredients for the filling and beat together.

Unroll cake and spread filling evenly. Top filling with thinly diced fresh peaches (as much as desired). Gently roll cake up (without towel) and dust with more powdered sugar. Refrigerate until ready to serve.

Peach Salsa

4 Large Tomatoes, Chopped

1 Med Onion, Finely Chopped

4 Large Peeled & Pitted Peaches, Chopped

2 Bell Peppers, Finely Chopped

2 Jalapeños, Chopped (Remove Seeds For Mild Salsa)

4 Tablespoons Lime Juice

2 Tablespoons Cilantro, Chopped

1 Teaspoon Salt

Dash of Black Pepper

Mix all ingredients together. Allow to refrigerate for a few hours to blend flavors. Serve with tortilla chips. Ingredients can be adjusted as desired.
